Every day at the moment, the highlight of my day is turning to my partner and saying ‘What are we going to have for dinner tonight’
I have been trying to be a bit more creative with my dishes so that Dinner is interesting and tasty.
I am going to add some of my favourite recipes here and share them over the next couple of weeks adding new ones weekly.
Slow Cooked Pork with Mash Potatoes & Slaw
If you don’t have one, they are must buy! So cheap! Buy here
The Pork
- 1 x Pork Fillet or Pork Shoulder
- 1 Teaspoon of Vegetable Oil
- 1 x cup of BBQ Sauce
- 1/2 cup of apple cider vinegar
- 1/2 cup of chicken broth
- 1 tablespoon of mustard- I use dijon
- 1 tablespoon of Worcestershire sauce
- 1 tablespoon of chilli powder
- 1 tablespoon of smoked Paprika
- 1 onion chopped small
- 2 garlic cloves
The Slaw & Mash Potatoes
- 1/4 of a Red Cabbage
- 1/4 of a Green Cabbage
- 3-4 Carrots
- Coriander
- Mint
- 1 Tablespoon of Sesame Oil
- 2 Tablespoons of Soya Sauce
- 1 Tablespoon of White Wine Vinegar
- 1 Teaspoon of Miso Paste
- 1 Tablespoon of Mayo / Tahini
- Handful of Sesame Seeds
Method
- Take out your slow cooker and add 1 Teaspoon of Oil, then add your pork and add the bbq sauce, apple cider vinegar and chicken broth
- Stir in the mustard, worcestershire sauce, chilli powder, onion and garlic
- Cover and cook on high until the roast shreds easily with a fork. 5-6 hours.
- Around 5.15 hrs in, boil your potatoes- once ready mash up and add butter, a dash of milk and a teaspoon of dijon mustard ( it makes it taste amazing!) and add salt and pepper
- To make the slaw, chop up all the cabbage and place in a bowl
- Grate the carrots longways and place in bowl
- Chop up coriander & mint and mix in
- Fry off the cup of sesame seeds
- Mix all the dressing ingredients and add the sesame seeds
Bean & Tuna Salad
Ingredients
- Tin of Tuna
- Tin of Black Eyed Beans ( you can also use butter beans)
- 1/4 of a finely chopped onion
- 1/2 a red pepper
- Handful of parsley
- 2 Tbs of Olive Oil
- 1 Tbs of Vinegar
- 1 tsp of Dijon Mustard
- Salt & Pepper
Method
- Drain your tuna ( you can skip the tuna if you are veggie or don’t eat fish) and add to a bowl
- Cut up your peppers small and thinly slice your onion into fine pieces
- Chop up your parsley finely and add to the bowl
- Separately mix together your oil, vinegar, mustard, salt and pepper
- Pour over the salad and mix together
So fresh, tasty and healthy!
Asian Salmon Salad
Ingredients:
Cooked Salmon Fillets – I usually buy these from Tesco
1/4 of a Red Cabbage
1/4 of a Green Cabbage
3-4 Carrots
Coriander
Mint
For the dressing
1 Tablespoon of Sesame Oil
2 Tablespoons of Soya Sauce
1 Tablespoon of White Wine Vinegar
1 Teaspoon of Miso Paste
1 Tablespoon of Mayo / Tahini
Handful of Sesame Seeds
Method
- Chop up all the cabbage and place in a bowl
- Grate the carrots longways and place in bowl
- Chop up coriander & mint and mix in
- Fry off the cup of sesame seeds
- Mix all the dressing ingredients and add the sesame seeds
- Pour over the salad
- Add the Salmon and serve!
* I use this dressing to make a asian slaw which I also serve with Pulled Pork and Mash Potato which is so delicious. It is also yummy with left over Chicken or you can make it vegetarian.
M&S QUICK EASY DINNER – Chicken Kievs with Mash, Beetroot Slaw and Greens
This is not such a homemade recipe but a go to of mine when I want something easy but tasty!
I have made this combo a couple of times and it’s always a winner- especially when we don’t have time to cook but don’t want to order another Deliveroo!
I buy the combo below and then add a green salad and tenderstem broccoli! It is such a good combo!
